This lot undergoes post-harvest Brix measurement and floating, with defective beans carefully removed. It undergoes 48 hours of fermentation in bags, followed by 12 hours of fermentation after pulp removal, and finally 60 hours of anaerobic fermentation, cleaning, and drying.
