Sumava Estate won Costa Rica's COE in 2016 and works with exporter Exclusive Coffees on experimental processing. This microlot uses only Kenya-varietal cherries picked ripe during a new-moon period, basket-rested in shade then tank-fermented — a natural/washed hybrid method. Clean, bright orange acidity, dark cherry and berry sweetness.
