Why this bean
Immediately after harvest, the coffee underwent a 45-hour fermentation before spending 10 days drying on raised beds under cool mountain conditions. Because Colibrí and Poró have so often produced some of Finca Sophia's most exceptional coffees, expectations for this lot were high—and it did not disappoint.
