Specialty decaf, explained.
Why the good stuff costs more.
It starts with the cherryA specialty bag marked decaf often costs more than the same roaster's caffeinated lot sitting on the shelf beside it. That isn't a markup on a lesser coffee. It's the price of an extra step the green bean went through before the roaster ever touched it, a step with its own facility, its own freight, and its own loss of weight along the way. Once you see what that step involves, the price stops looking like a premium and starts looking like arithmetic.
Decaffeination happens after the cherry, not instead of it.
A decaf lot has already been through a cherry-processing step before caffeine enters the conversation at all. Washed, natural, honey, whatever the farm chose still happened first, the same as it would for the caffeinated version of that lot. See coffee processing methods for that half of the story. Decaffeination is a second, separate step, done to green coffee after it's already dried and prepared for export, and it's the piece of the label most bags leave off.
Four ways to take the caffeine out.
Four methods cover almost everything you'll find on a specialty shelf.
Swiss Water uses only water and a saturated coffee extract; no chemical solvent touches the bean. Green coffee sits in a bath that already carries everything found in green coffee except caffeine, so caffeine alone moves out through osmosis while the rest of the bean's soluble character stays where it is. It's the method most associated with clean, well-preserved cup character, and it's also the most expensive of the four, run at a small number of dedicated facilities rather than at origin.
Sugarcane decaf, often labeled just EA, uses ethyl acetate derived from fermented sugarcane to draw caffeine out of moistened green coffee. It's the method you'll see most often on Colombian lots, partly because the sugarcane the solvent comes from and the plants that process it both sit close to the growing regions. Done well, it keeps a lot of the original sweetness in the cup, which is part of why it has become the default answer for Colombian decaf specifically.
CO2 decaffeination pressurizes carbon dioxide into a state that behaves like both a liquid and a gas, and uses it to pull caffeine out of the bean before recycling the CO2 for the next batch. The equipment is specialized and expensive to run, which pushes the economics toward large batches rather than small specialty lots. You'll see it more often behind big commercial decaf brands than on a single-origin bag, simply because the plant needs volume to make sense.
The older solvent methods apply a direct chemical solvent, most often methylene chloride, straight to the moistened bean, then rinse and steam it off before drying. It's been in use for over a century, it's still permitted, and it's the cheapest of the four. It's also the method behind decaf's old reputation for tasting flat and papery, and the one a specialty label is least likely to name outright.
All four methods remove caffeine. Only one of them is also removing the reason decaf used to taste like an afterthought.
Why the good version costs more.
Specialty green is already bought at a specialty price before any of this happens, and that part of the bill is identical to the caffeinated version of the same lot. What decaf adds on top is a second trip. The green ships once to reach the roaster's country, then a second time to whichever facility runs the decaffeination the roaster wants, then back again before it can be roasted at all. Few countries host these facilities, so that second leg is rarely short.
Weight is lost along the way too, and not just the caffeine itself, which is a small fraction of the bean's mass to begin with. Soaking, extracting, and redrying a green bean costs it moisture and density beyond whatever caffeine came out, so the roaster buys more green than will ever end up in a roasted bag. Add the extra freight to the extra weight loss, and the roaster ends up paying for the coffee twice over before a bean is ever roasted. How to read a decaf label.
A label that's proud of its decaffeination method prints it: Swiss Water, EA or sugarcane process, CO2. A label that just says decaf and stops there is usually telling you that whichever method was used is the cheapest one available. Everything else on a decaf bag reads the same as any other specialty bag: origin, variety, altitude, cherry-processing method, roast date. Why it roasts differently, and can look darker than it is.
Decaffeination changes the bean before it ever reaches the roaster. Soaking and extraction leave it more porous and change how moisture sits inside it, so a decaf bean browns faster than a caffeinated bean from the same lot at the same roast settings. Pushed to the same internal temperature, it can look a full shade darker on the outside than it actually is on the inside. Roasters who know their decaf pull the roast shorter or drop the charge temperature to compensate, which is why judging a decaf by color alone is unreliable. The roast date and the roaster's own notes tell you more than the shade of the bean does.
What to expect, honestly.
A well-sourced decaf, roasted with attention, is a genuinely good cup. Sweetness and body carry over fine. What tends to thin out is clarity: the same soluble compounds that give a caffeinated cup its brightest acidity and its most delicate aromatics are partly drawn out along with the caffeine, whichever method is used. Expect a slightly quieter cup than the same lot with its caffeine intact, not a lesser one. That's a fair trade for what decaf is actually for, not a defect to apologize for.
Decaf is also not the same as caffeine-free, and it's worth being plain about that. The decaffeination standard specialty roasters work to removes the large majority of the caffeine in green coffee and leaves a small amount behind. If you're avoiding caffeine entirely for a medical reason, treat decaf as a reduction, not a guarantee.

If you're avoiding caffeine entirely for a medical reason, treat decaf as a large reduction rather than a guarantee.
