Why this bean

The 2nd Spade release features Finca Monteblanco Carabao Mango, produced by Rodrigo Sánchez in San Adolfo, Huila, Colombia. During cupping, the coffee immediately reminded us of the bright sweetness and vibrant acidity of Carabao green mango — one of the signature fruits of Zambales.
